No artificial preservatives, sweeteners, flavourings or colours are added. Clearspring sushi ginger, Japanese name amazu shoga, has a superb flavour and is prepared from young, tender ginger roots, thinly sliced, briefly salt pressed, then pickled in high-quality rice vinegar. It's unsweetened and its colour comes naturally from red shiso herbs. Pickled ginger is almost always served with sushi or sashimi to cleanse the palate between mouthfuls and also for its antibacterial qualities.
Serving suggestion: This ginger has a refreshing, zesty flavour that combines especially well with rice, tempura and fish. Sliced into thin strips, it's a delicious addition to stir-fries and both tossed and pasta salads and, of course, it's perfect with sushi!
Storage: Refrigerate after opening.
