Very fine powdered Japanese green tea.

Traditionally used exclusively for Japanese ceremonies. Has become popular for making green-tea ice cream and sponge cakes.

Recipe: Matcha ice cream (green-tea ice cream)

Ingredients:

  • 500 ml vanilla ice cream
  • 2 tsp. matcha (Japanese green-tea powder)
  • 2 tsp. lukewarm water

Method:

  1. Take the ice cream out the freezer then keep in the refrigerator for 20-30 minutes just to soften.
  2. Mix the matcha and lukewarm water to make a smooth paste.
  3. Put the softened ice cream into a large bowl. Add the matcha paste, then mix very thoroughly with a spatula.
  4. Put the bowl in the freezer for 1 hour.

Serve in a dessert bowl with fresh fruits of your choice or ready-made sweet azuki bean paste for a true Japanese touch (2 tbsp. per person).
